Prepare the Potatoes
Peel the Russet potatoes and shred them using a box grater or a food processor. Place the shredded potatoes in a large bowl of cold water to remove excess starch.

Prepare the Onion
Finely chop the onion and set aside.

Drain and Dry
After soaking the potatoes for about 10 minutes, drain them and spread onto a clean kitchen towel. Pat them dry to remove as much moisture as possible.

Mix Ingredients
In a mixing bowl, combine the shredded potatoes, chopped onion, salt, and pepper. Mix well.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot.

Cook the Hash Browns
Add the potato mixture to the skillet in a flat layer. Cook for about 5-7 minutes or until the bottom is golden brown. Flip the hash browns in sections and cook for another 5-7 minutes until the other side is golden and crispy.

Serve
Remove from skillet and drain on paper towels. Serve hot.
