Prepare the Pineapple Topping
In a skillet over medium heat, melt 2 tablespoons of butter. Add brown sugar and stir until dissolved. Place pineapple rings in the skillet and cook for about 2 minutes on each side until caramelized. Remove from heat and set aside.

Make the Pancake Batter
In a large bowl, combine flour, baking powder, sugar, and salt. In another bowl, whisk together milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.

Cook the Pancakes
Preheat a non-stick skillet or griddle over medium heat. Pour 1/3 cup of batter onto the skillet and immediately place a caramelized pineapple ring on top. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.

Remove pancakes from the skillet and serve warm with maple syrup and the remaining caramelized pineapple on top.
