Peach Peppadew Cobbler Skillet Recipe

Preparation

    Prepare the Skillet

    Preheat your oven to 350°F (175°C). In a large cast-iron skillet, melt the butter over medium heat.

    Mix the Fruit

    In a large bowl, combine the sliced peaches and chopped Peppadew peppers. Add 1/4 cup of the sugar and mix well. Let sit for about 10 minutes to draw out the juices.

    Make the Batter

    In another bowl, whisk together the flour, remaining sugar, baking powder, salt, cinnamon, milk, and vanilla extract until smooth.

    Combine and Bake

    Pour the fruit mixture into the skillet with the melted butter. Then pour the batter over the fruit mixture evenly. Bake in the preheated oven for 30-35 minutes, or until golden brown and a toothpick inserted comes out clean.

    Serve

    Remove from the oven and let cool slightly. Serve warm with a scoop of Prigel Family Creamery’s Organic Cinnamon Ice Cream on top.
