    In a large bowl, combine the jumbo lump crab meat, diced jalapeño-smoked bacon (cooked and chopped), corn, diced tomato, and five-cheese blend. Mix gently to avoid breaking up the crab meat.

    Add salt and black pepper to the crab mixture and stir until well combined.

    Form the Bites

    Using your hands, take about 2 tablespoons of the crab mixture and form it into a small ball or patty. Repeat until all the mixture is used.

    Set up a breading station. Place the flour in one bowl, the beaten egg in another, and the panko bread crumbs in a third. Dip each crab bite first in flour, then in egg, and finally in panko, ensuring they are fully coated.

    In a large skillet, heat the olive oil over medium-high heat. Once hot, carefully add the crab bites in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
