Soak the Slices
Place the potato slices in a bowl of cold water for about 30 minutes to remove excess starch.

Dry the Slices
Drain the potato slices and pat them dry with paper towels.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Chips
Carefully add the potato slices to the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes per batch.

Remove the chips with a slotted spoon and place them on paper towels to drain. Sprinkle with salt while still hot.
