    Prepare the Grits

    In a medium saucepan, bring water to a boil. Stir in the corn grits, salt, and pepper. Reduce heat to low and simmer, stirring occasionally, until thickened (about 20 minutes). Remove from heat and stir in shredded cheddar cheese. Allow to cool slightly.

    Make the Pimento Cheese Filling

    In a mixing bowl, combine cream cheese, sharp cheddar cheese, pimentos, mayonnaise, garlic powder, onion powder, salt, and black pepper. Mix until smooth and well combined.

    Form the Fritters

    Once the grits have cooled, stir in the eggs and flour until fully combined. Using your hands, take a scoop of the grit mixture, flatten it in your palm, and place a teaspoon of pimento cheese filling in the center. Fold the edges over to seal and form a fritter.

    Fry the Fritters

    In a large skillet, heat vegetable oil over medium heat. Carefully place the fritters in the hot oil, frying in batches until golden brown (about 3-4 minutes per side). Remove and drain on paper towels.

    Serve

    Serve the grit fritters warm with additional pimento cheese on the side, if desired.
