    Prepare the Eggs

    Hard boil the eggs by placing them in a pot of cold water, bringing it to a boil, then covering and letting sit for 10-12 minutes. Cool in ice water, peel, and slice in half.

    Make the Filling

    In a mixing bowl, scoop out the yolks of the eggs and combine with mayonnaise, Dijon mustard, fresh spinach (lightly steamed and chopped), green food coloring, salt, and pepper. Mash until smooth.

    Fold in the diced smoked ham into the egg yolk mixture until well combined.
