    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in the stone ground grits and a pinch of salt. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally, until thick and creamy. Stir in butter, diced bacon, diced tomato, and chives. Set aside.

    Fry the Green Tomatoes

    Heat oil in a skillet over medium heat. Dredge the green tomato slices in cornmeal and fry until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels and season with salt.

    Cook the Shrimp

    In another skillet, heat olive oil over medium-high heat. Season the shrimp with Cajun spice, salt, and black pepper. Cook shrimp for 2-3 minutes on each side until they are opaque and cooked through.

    Prepare the Roasted Corn Emulsion

    In a blender, combine roasted corn with a splash of water, a pinch of salt, and blend until smooth. Adjust seasoning as needed.

    Assemble the Dish

    On a plate, place a fried green tomato slice, top with a generous scoop of the grits, and place the blackened shrimp on top. Drizzle with roasted corn emulsion and garnish with extra chives.
