Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Sprinkle both sides with salt and let them sit for about 10 minutes to draw out moisture.

Set Up Breading Station
In one bowl, place the all-purpose flour mixed with black pepper and cayenne pepper. In another bowl, pour the buttermilk. In a third bowl, place the cornmeal.

Coat the Tomatoes
Dredge each slice of tomato in the flour, shaking off excess. Dip it in the buttermilk, then coat it with cornmeal, pressing gently to adhere.

Fry the Tomatoes
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded tomato slices in batches, frying until golden brown (about 3-4 minutes per side). Drain on paper towels.

Serve hot with your favorite dipping sauce.
