    Prepare the Eggs

    Place the eggs in a pot and cover with water. Bring to a boil, then remove from heat and let sit for 12 minutes. Cool the eggs in ice water, then peel.

    Make the Filling

    Cut the peeled eggs in half and remove the yolks. In a bowl, mash the yolks with mayonnaise, mustard, salt, pepper, and paprika until smooth. Spoon the mixture back into the egg whites.

    Coat the Eggs

    Set up a breading station: one bowl with flour, another with beaten eggs, and a third with panko breadcrumbs. Dip each filled egg half first in flour, then in the beaten eggs, and finally in the panko breadcrumbs.

    Fry the Eggs

    In a deep pan, heat vegetable oil over medium heat. Once hot, fry the coated eggs in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.

    Sprinkle with additional paprika if desired and serve warm as an appetizer.
