    Prepare the Biscuit

    In a large bowl, mix the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the pimento cheese. Add milk gradually until a dough forms. Roll out and cut into biscuit shapes.

    In a skillet over medium heat, cook the applewood-smoked bacon until crispy. Remove and place on paper towels to drain.

    In the same skillet with a little bacon grease, cook the eggs to your desired style (scrambled, fried, etc.).

    Prepare the Hash Browns

    In a separate skillet, sauté the shredded potatoes and onions over medium-high heat until golden brown and crispy. Season with salt to taste.

    Assemble the Dish

    Serve the eggs alongside the crispy bacon, pimento cheese biscuit, and a portion of the hash browns. Top the hash browns with diced tomatoes and chives.
