Preparation of Deviled Eggs

    Boil the Eggs

    Place eggs in a saucepan, cover with water, and bring to a boil. Once boiling, cover and remove from heat. Let sit for 12 minutes, then transfer to an ice bath to cool.

    Make the Filling

    Peel the cooled eggs and slice them in half. Remove yolks and place them in a bowl. Mash yolks and mix with mayonnaise, Dijon mustard, salt, pepper, and paprika until smooth.

Preparation of Jalapeños

    Prepare Jalapeños

    Preheat the oil in a deep frying pan. Slice the jalapeños in half lengthwise and remove the seeds. Stuff each jalapeño half with the deviled egg filling.

    Breading

    Set up a breading station with flour, beaten eggs, and panko bread crumbs. Dip each stuffed jalapeño first in flour, then in egg, and finally in panko to coat.

    Fry the Jalapeños

    Carefully place the breaded jalapeños in the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

    In a bowl, mash the avocado and mix in lime juice, sour cream, and salt until smooth.

Serving

    Serve the fried jalapeños hot, drizzled with avocado lime cream and sprinkle with Cajun spice.
