    Prepare the Coconut Filling

    In a bowl, mix the coconut cream cheese and flaked coconut until well combined. Set aside.

    In another bowl, whisk together eggs, milk, vanilla extract, and a pinch of salt until smooth.

    Stuff the Bread

    Take one slice of challah bread, spread a generous amount of the coconut filling on one side, and top with another slice to create a sandwich. Repeat with remaining bread and filling.

    Heat a skillet or griddle over medium heat and melt 1 tbsp of butter. Dip each stuffed sandwich into the egg mixture, ensuring both sides are coated.

    Place the dipped sandwiches on the skillet and cook for 3-4 minutes on each side, or until golden brown. Add more butter as needed.
