Make the Pancake Batter
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt. In another bowl, combine the milk, egg, vanilla extract, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

Cook the Pancakes
Preheat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown. Repeat with remaining batter.

Prepare the Cream Cheese Icing
In a small bowl, mix together 4 oz of cream cheese, 1 cup of powdered sugar, 1 tsp of vanilla extract, and 2-3 tbsp of milk until smooth and creamy. Adjust the milk for desired consistency.

Stack the pancakes on a plate and drizzle generously with cream cheese icing. Enjoy warm.
