    Prepare the Batter

    In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until well combined.

    Mix Wet Ingredients

    In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract.

    Combine Ingredients

    Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

    Preheat the Griddle

    Heat a griddle or frying pan over medium heat and lightly grease with cooking spray or butter.

    Cook the Pancakes

    Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.

    Serve

    Serve the pancakes warm with whipped butter, maple syrup, and a dusting of powdered sugar. Drizzle with raspberry purée if desired.
