Prepare the Oysters
In a skillet, melt 2 tablespoons of butter over medium heat. Add the shucked oysters and sprinkle with Cajun seasoning. Sauté for about 2-3 minutes until the oysters are cooked through. Remove from heat and set aside.

Poach the Eggs
In a large pot, bring water to a gentle simmer. Crack the eggs into a small bowl, then gently slide them into the simmering water. Poach for about 3-4 minutes or until the whites are set but the yolks are still runny. Remove the eggs with a slotted spoon and drain on paper towels.

Toast the English Muffins
Slice the English muffins in half and toast them until golden brown.

Make the Cream Sauce
In a saucepan, melt the remaining 2 tablespoons of butter over medium heat. Whisk in the heavy cream and lemon juice. Season with salt and black pepper to taste. Let it simmer for 2-3 minutes until slightly thickened.
