    Prepare the Crab Cakes

    If the crab cakes are not pre-cooked, pan-fry them in a skillet over medium heat with 1 tablespoon of butter until golden brown on both sides, about 4-5 minutes per side. Keep warm.

    Poach the Eggs

    Bring a pot of water to a gentle simmer and add the white vinegar. Crack the eggs into individual cups, and then gently slide them into the water. Poach for about 3-4 minutes for soft yolks. Remove with a slotted spoon and drain on paper towels.

    Toast the English Muffins

    While the eggs are poaching, split the English muffins and toast them until golden brown. Spread each half with a little butter.

    Assemble the Eggs Benedict

    On each toasted English muffin half, place a crab cake, top with a poached egg, and drizzle with Hollandaise sauce. Sprinkle with paprika and chopped fresh chives. Season with salt and black pepper to taste.
