Squid Preparation

Clean the Squid
Start by cleaning the fresh squid. Remove the head, innards, and skin. Rinse thoroughly under cold water and pat dry with paper towels.

Slice the Squid
Cut the cleaned squid into rings about 1/2 inch thick.

Prepare the Coating
In a large bowl, mix together the all-purpose flour, cornstarch, salt, and black pepper.

Coat the Squid
Dredge the squid rings in the flour mixture until evenly coated. Shake off any excess flour.

Heat the Oil
In a deep frying pan or wok, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Squid
Carefully add the coated squid rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Prepare the Sauce
In a small bowl, combine the sweet chili sauce, lime juice, minced garlic, and chili flakes. Mix well.

Sprinkle the chopped cilantro over the sauce and stir to combine.
