Preparation

  1. 1

    Make Strawberry Puree

In a blender, add fresh strawberries (about 1 cup) and blend until smooth. For a sweeter puree, you can add a tablespoon of sugar. Strain through a fine mesh sieve to remove seeds, if desired.

  2. 2

    Prepare the Glass

Chill a tall glass or a hurricane glass by filling it with ice water and setting it aside while you prepare the drink.

Mixing the Drink

  1. 3

    Combine Ingredients

In a cocktail shaker, combine the white rum, pineapple juice, and simple syrup. Fill the shaker with ice and shake vigorously for about 15 seconds.

  2. 4

    Layer the Drink

Remove the ice water from your chilled glass. Strain the rum mixture into the glass filled with fresh ice. Slowly pour the strawberry puree over the back of a spoon into the glass to create a layered effect.

Garnishing

  1. 5

    Garnish

Optionally, garnish the drink with a fresh strawberry or a slice of pineapple on the rim of the glass for added color and presentation.
