Method
Preparation
- 1
Mixing the Ingredients
In a large mixing bowl, combine the prawn powder, cornstarch, tapioca flour, salt, and sugar. Mix well until all the dry ingredients are thoroughly combined.
- 2
Adding Water
Slowly add the water to the dry mixture, stirring continuously until the mixture forms a smooth dough. Make sure there are no lumps.
- 3
Shaping the Crackers
Transfer the dough onto a clean surface and knead it for about 5 minutes until it's smooth. Roll the dough into a log shape about 2-3 cm in diameter. Wrap the log in plastic wrap and refrigerate for at least 1 hour to firm up.
Cooking
- 4
Slicing the Log
After chilling, remove the log from the refrigerator. Unwrap it and slice it into thin discs, about 1-2 mm thick.
- 5
Heating the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until hot (about 180°C or 350°F).
- 6
Frying the Crackers
Carefully add a few slices of the prawn cracker dough into the hot oil. Fry them in batches, ensuring not to overcrowd the pan. Fry for about 1-2 minutes or until they puff up and turn golden brown. Remove them with a slotted spoon and drain on paper towels.
- 7
Serving
Once all the crackers are fried, serve them warm or at room temperature as a crunchy snack or appetizer.
