Pork Belly Preparation

    Prepare the Pork Belly

    Preheat your oven to 300°F (150°C).

    Season the Pork

    In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and paprika. Rub the mixture all over the pork belly, ensuring it is evenly coated.

    Sear the Pork

    In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork belly skin-side down and sear for about 5-7 minutes until the skin is crispy. Flip the pork belly and sear the other side for an additional 5 minutes.

    Slow Cook the Pork

    Pour the chicken broth into the skillet around the pork belly (do not pour it over the skin). Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Cook for 2.5 to 3 hours, or until the pork is tender and the skin is crispy.

    Rest the Pork

    Once cooked, remove the pork belly from the oven and let it rest for 15 minutes before slicing.

Apple Sauce Preparation

    Prepare the Apples

    While the pork belly is cooking, peel, core, and chop the apples into small pieces.

    Cook the Apples

    In a medium saucepan, combine the chopped apples, sugar, cinnamon, and lemon juice. Cook over medium heat, stirring occasionally, for about 15-20 minutes, or until the apples are soft.

    Mash the Apples

    Using a potato masher or fork, mash the apples to your desired consistency. For a smoother sauce, you can also use an immersion blender.

    Serve

    Once the pork belly has rested, slice it and serve it warm with the homemade apple sauce on the side.
