Pasta Preparation

Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Vegetable Sauté

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

Add Mixed Vegetables
Add the bell peppers, zucchini, carrots, broccoli, and cherry tomatoes to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

Add Spinach
Stir in the spinach and cook for an additional 2-3 minutes until wilted.
Sauce Preparation

Make the Sauce
Pour the vegetable broth into the skillet with the sautéed vegetables. Add lemon juice, salt, and black pepper to taste. Stir well and let simmer for 2-3 minutes.

Combine Pasta and Sauce
Add the cooked pasta to the skillet and toss to combine all ingredients. Cook for an additional 2 minutes, allowing the pasta to absorb some of the sauce.

Serve
Remove from heat and sprinkle with grated Parmesan cheese before serving. Adjust seasoning if necessary.
