Preparation

Soak Noodles
Soak the rice noodles in warm water for about 30 minutes or until soft. Drain and set aside.

Prepare Sauce
In a small bowl, mix together fish sauce, tamarind paste, sugar, and chili powder. Set aside.
Cooking

Sauté Tofu and Prawns
Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add cubed tofu and cook until golden brown, about 5 minutes. Remove tofu and set aside.

Cook Prawns
In the same pan, add another tablespoon of vegetable oil, then add prawns. Sauté until they turn pink and are cooked through, about 3-4 minutes. Remove and set aside with the tofu.

Stir-fry Vegetables
Add the remaining tablespoon of oil to the pan. Add minced garlic, sliced bell pepper, and sliced green onions. Stir-fry for about 2-3 minutes until fragrant.

Combine Ingredients
Add the soaked rice noodles and the prepared sauce to the pan. Toss everything together for about 2 minutes until well combined.

Add Tofu and Prawns
Return the cooked prawns and tofu to the pan, along with the bean sprouts. Toss gently for another 2-3 minutes to heat through and combine flavors.
Serving

Garnish and Serve
Remove from heat, transfer to plates, and garnish with crushed peanuts and lime wedges. Serve immediately.
