Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, salt, black pepper, and lemon juice. Add the salmon fillets and coat them well. Let them marinate for at least 15 minutes.

  2. 2

    Preheat the Grill

Preheat the grill to medium-high heat.

  3. 3

    Grill the Salmon

Place the marinated salmon fillets on the grill. Cook for about 5-6 minutes on each side, or until the salmon is cooked through and has nice grill marks.

Preparing the Vegetables

  1. 4

    Chop the Vegetables

Slice the zucchini and bell peppers into strips. Trim the ends off the asparagus.

  2. 5

    Toss with Olive Oil

In a bowl, toss the chopped vegetables with olive oil, salt, and black pepper.

  3. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill and cook for about 8-10 minutes, turning occasionally, until tender and slightly charred.

Making the Lemon Butter Sauce

  1. 7

    Melt the Butter

In a small saucepan over medium heat, melt the butter.

  2. 8

    Add Garlic and Lemon Juice

Add minced garlic to the melted butter and sauté for about 1 minute until fragrant. Stir in the lemon juice.

  3. 9

    Finish the Sauce

Remove from heat and stir in chopped parsley, salt, and black pepper to taste.

Serving

  1. 10

    Plate the Dish

On a serving plate, arrange the grilled salmon alongside the grilled seasonal vegetables. Drizzle the lemon butter sauce over the salmon.

  2. 11

    Garnish

Garnish with additional parsley if desired and serve immediately.
