Melt the Chocolate
Chop the dark chocolate into small pieces and place them in a heatproof bowl. Add the unsalted butter to the bowl. Set the bowl over a pot of simmering water (double boiler method) and stir until the chocolate and butter are melted and smooth. Remove from heat and let it cool slightly.

Whisk the Egg Yolks
Separate the egg yolks from the whites. In a medium bowl, whisk the egg yolks with granulated sugar until the mixture is pale and creamy. Gradually add the melted chocolate mixture to the egg yolks, whisking continuously until well combined.

Whip the Cream
In another bowl, whip the heavy cream until soft peaks form. Add the vanilla extract and continue to whip until stiff peaks form.

Combine Ingredients
Gently fold the whipped cream into the chocolate mixture until no white streaks remain. Then, gently fold in the beaten egg whites, being careful not to deflate the mixture.

Chill the Mousse
Spoon the mousse mixture into individual serving dishes. Cover and refrigerate for at least 2 hours, or until set.

Serve
Once set, serve the chocolate mousse chilled. You can garnish it with chocolate shavings, berries, or a dollop of whipped cream if desired.
