Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 200°C (392°F) to ensure it's hot enough for baking the fondant.
- 2
Making the Fondant
- 3
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave in short bursts, stirring until smooth.
- 4
Combine Eggs and Sugar
In a separate bowl, whisk together the large eggs and granulated sugar until the mixture is pale and fluffy.
- 5
- 6
Add Flour and Vanilla
Sift in the all-purpose flour and add the vanilla extract. Gently fold the mixture until just combined—do not overmix.
Baking
- 7
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 8
Bake the Fondants
Place the ramekins on a baking tray and bake in the preheated oven for about 12-14 minutes, or until the edges are set but the center is still soft.
- 9
Cool and Serve
Remove the fondants from the oven. Let them cool for 1-2 minutes, then carefully invert onto plates. Serve warm, optionally dusted with cocoa powder.
