Chicken Marinade Preparation

Prepare the Chicken
Cut the chicken thighs into bite-sized pieces and place them in a bowl.

In a separate bowl, combine soy sauce, lime juice, brown sugar, minced garlic, grated ginger, curry powder, salt, and black pepper.

Marinate the Chicken
Pour the marinade over the chicken pieces, ensuring they are well coated. Cover the bowl and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
Peanut Sauce Preparation

Combine Ingredients
In a saucepan, combine peanut butter, coconut milk, soy sauce, lime juice, honey, and water.

Heat the Sauce
Heat the mixture over medium heat, stirring frequently, until it becomes smooth and well combined.

Adjust Flavor
Add sriracha sauce to taste for a spicy kick. Remove from heat and set aside.
Grilling the Chicken

Prepare Skewers
If using wooden skewers, soak them in water for 30 minutes to prevent burning.

Thread the marinated chicken pieces onto the skewers, leaving some space between each piece for even cooking.
