    Pickling the Blueberries

    In a small saucepan, combine the white vinegar, sugar, and salt. Bring to a simmer over medium heat, stirring until the sugar dissolves. Add the blueberries and remove from heat. Let cool to room temperature, then refrigerate for at least 30 minutes.

    Grilling the Watermelon

    Preheat your grill to medium-high heat. Cut the watermelon into thick slices, about 1 inch wide. Brush both sides with olive oil and season with black pepper. Grill the watermelon slices for about 3-4 minutes on each side, or until grill marks appear and the watermelon is slightly softened.

    Assembling the Salad

    On a serving platter, arrange the grilled watermelon slices. Spoon the pickled blueberries over the top and sprinkle with fresh mint leaves. Serve immediately.
