Directions

  1. 1

    Prepare the Cure

In a bowl, mix together the brown sugar, sea salt, and black peppercorns to create the cure.

  2. 2

    Cure the Salmon

Lay the salmon fillet skin-side down in a shallow dish. Spread the cure mixture evenly over the salmon. Sprinkle with fresh dill. Cover the dish with plastic wrap and refrigerate for 24-48 hours, depending on the desired saltiness.

  3. 3

    Rinse and Dry

After curing, remove the salmon from the refrigerator and rinse off the cure under cold water. Pat dry with paper towels.

  4. 4

    Smoke the Salmon

Prepare your smoker according to the manufacturer's instructions. Smoke the salmon at a low temperature (around 175°F or 80°C) for about 1-2 hours until it reaches your desired level of smokiness.

  5. 5

    Serve

Once smoked, let the salmon cool slightly, then slice thinly. Arrange on a platter with capers, lemon wedges, red onion, cucumber, and serve with baguette or crackers.
