Chicken Sandwich

Marinate the chicken breasts in olive oil, Cajun spice, salt, and black pepper for at least 30 minutes.

Grill or pan-fry the marinated chicken breasts over medium-high heat for about 6-7 minutes per side or until fully cooked.

Toast the brioche buns, then layer with lettuce, the cooked chicken, tomato slices, and Cajun spice aioli.

Mix Ingredients
In a bowl, combine mayonnaise, Cajun spice, lemon juice, and minced garlic. Stir until well mixed.
Coleslaw

In a large bowl, mix together shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, and salt. Toss until well combined.

Boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and cool.

In a bowl, combine the cooled potatoes with mayonnaise, mustard, chopped celery, sliced green onions, salt, and black pepper. Mix well.
