    Prepare the Hickory Grill

    Soak the hickory wood chips in water for about 30 minutes before grilling.

    Grill the Salmon

    Preheat your grill. Once hot, add the soaked hickory chips to the grill. Season the salmon fillets with olive oil, salt, and black pepper. Place the salmon on the grill and cook for about 6-8 minutes on each side, or until the fish is cooked through and has a nice smoky flavor.

    Prepare the Risotto

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add Arborio rice and stir for 1-2 minutes until lightly toasted. Gradually add the vegetable broth, one cup at a time, stirring constantly until absorbed before adding more. After about 20 minutes of cooking, add the English peas and continue cooking until the rice is creamy and al dente.

    Prepare the Salad

    Thinly slice the radishes and toss them in a bowl with the ricotta salata cheese, chopped mint leaves, and citrus jalapeno vinaigrette.

    Plate the grilled salmon alongside the English pea risotto and top with the radish salad. Drizzle the tomato vinaigrette over the dish before serving.
