Method

For the Spiced Beef Hand Pies

  1. 1

    Prepare the Filling

In a skillet, heat olive oil over medium heat. Add the finely chopped onion and sauté until translucent.

  2. 2

    Cook the Beef

Add minced garlic and diced carrot to the skillet, cooking for another 2 minutes. Then, add the ground beef, cumin, coriander, paprika, salt, and black pepper. Cook until the beef is browned and cooked through, about 8-10 minutes.

  3. 3

    Prepare the Hand Pies

Roll out the puff pastry sheets on a floured surface. Cut into circles, and place a spoonful of the beef filling in the center of each circle. Fold over and seal the edges with a fork.

  4. 4

    Brush and Bake

Preheat the oven to 200°C (400°F). Brush the tops of the hand pies with beaten egg. Bake for 20-25 minutes or until golden brown.

For the Mustard Greens

  1. 5

    Sauté the Greens

In a separate pan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add chopped mustard greens, salt, and black pepper. Cook until wilted, about 3-5 minutes.

For the Yassa Onion Jam

  1. 6

    Caramelize the Onions

In a saucepan, heat olive oil over low heat. Add the sliced onions and cook gently, stirring often, until they are caramelized, about 15-20 minutes.

  2. 7

    Finish the Jam

Add white wine vinegar, sugar, and salt to the caramelized onions. Stir well and cook for another 5 minutes until thickened. Remove from heat.

For the Harissa

  1. 8

    Serve

Use harissa paste as a condiment served alongside the hand pies, mustard greens, and yassa onion jam.
