Method
Grilled Pork Chop
Prepare the Marinade
In a small bowl, mix together the olive oil, garlic powder, onion powder, paprika, salt, and black pepper to create a marinade.
Marinate the Pork Chops
Rub the marinade all over the pork chops. Cover and let them marinate in the refrigerator for at least 30 minutes.
Preheat the Grill
Preheat your grill to medium-high heat.
Collard Greens
Prepare the Collard Greens
Rinse the collard greens thoroughly and remove the tough stems. Chop the leaves into bite-sized pieces.
Cook the Collard Greens
Add the chopped collard greens to the pot and stir to coat with the garlic oil. Pour in the vegetable broth, add salt, black pepper, and red pepper flakes. Bring to a boil, then reduce heat and simmer for about 30 minutes, until the greens are tender.
Peach Chutney
Combine Ingredients
In a saucepan, combine the diced peaches, onion, brown sugar, apple cider vinegar, grated ginger, cinnamon, and salt.
Cook the Chutney
Bring the mixture to a boil over medium heat. Reduce the heat and let it simmer for about 20-25 minutes, stirring occasionally, until the chutney thickens.
Cool and Serve
Allow the chutney to cool before serving it alongside the grilled pork chops.
