1. Preheat the oven

Preheat your oven to 400°F (200°C).

2. Wash and trim beets

Wash the beets thoroughly under running water. Trim the tops and roots but leave the skin on.

Wrap each beet individually in aluminum foil, ensuring they are sealed tightly.

Roasting

4. Roast the beets

Place the wrapped beets on a baking sheet and roast in the preheated oven for about 45-60 minutes, or until they are tender when pierced with a fork.

5. Cool and peel

Once roasted, remove the beets from the oven and let them cool for about 10-15 minutes. Then, unwrap and peel the skins off using your hands or a paper towel.

Slice the peeled beets into wedges and arrange them on a serving platter.

7. Add toppings

Crumble the goat cheese over the warm beets and sprinkle with chopped pistachios.

8. Drizzle dressing

In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper. Drizzle the dressing over the beets before serving.
