Method

Hushpuppies

  1. 1

    Prepare the batter

In a large bowl, combine the cornmeal, flour, baking powder, salt, black pepper, and cayenne pepper. Mix well.

  2. 2

    Add wet ingredients

In another bowl, whisk together the buttermilk and egg. Add the smoked grouper, onion, and green onion to the wet mixture, then pour it into the dry ingredients. Stir until just combined.

  3. 3

    Fry the hushpuppies

Heat vegetable oil in a deep frying pan over medium-high heat. Once the oil is hot, drop spoonfuls of the batter into the oil, frying until golden brown on both sides, about 3-4 minutes. Remove and drain on paper towels.

Black Remoulade

  1. 4

    Mix the ingredients

In a bowl, combine the mayonnaise, Dijon mustard, chopped capers, chopped black olives, lemon juice, garlic powder, smoked paprika, salt, and black pepper. Stir until smooth. Refrigerate until ready to serve.

Radish Slaw

  1. 5

    Combine the slaw ingredients

In a large bowl, mix the sliced radishes, cabbage, and grated carrot. Drizzle with apple cider vinegar and olive oil, then sprinkle with salt and black pepper. Toss to combine.

Assembly

  1. 6

    Serve

On a serving plate, place a portion of hushpuppies alongside a generous serving of radish slaw. Add a small bowl of black remoulade for dipping and garnish with lemon wedges.
