Hushpuppies

    Prepare the batter

    In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and black pepper. Mix well.

    Incorporate wet ingredients

    Add the chopped onion, green onion, smoked grouper, buttermilk, and beaten egg to the dry ingredients. Stir until just combined, being careful not to overmix.

    Heat the oil

    In a deep skillet or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the hushpuppies

    Using a tablespoon, drop spoonfuls of the batter into the hot oil. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Black Remoulade

    Mix the remoulade

    In a bowl, combine mayonnaise, Dijon mustard, chopped capers, parsley, minced garlic, cayenne pepper, lemon juice, and black pepper. Stir until well blended. Refrigerate until ready to serve.

Radish Slaw

    In a bowl, combine thinly sliced radishes, shredded cabbage, and shredded carrot. Drizzle with apple cider vinegar and olive oil, then season with salt and black pepper. Toss until evenly coated.

Serving

    Serve the hushpuppies warm on a plate alongside the radish slaw. Add a generous dollop of black remoulade and garnish with lemon wedges.
