    Make the Cavatelli Dough

    In a mixing bowl, combine rye flour, semolina flour, and a pinch of salt. Create a well in the center and add eggs and water. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Shape the Cavatelli

    Roll the dough into thin logs, then cut into small pieces. Use a fork to create ridges on each piece. Set aside.

Braised Lamb

    Sear the Lamb

    In a large pot, heat olive oil over medium-high heat. Season lamb with salt and pepper, then sear on all sides until browned. Remove and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, garlic, and carrot. Cook for about 5 minutes until softened.

    Braised Lamb Cooking

    Return the lamb to the pot. Add red wine, beef broth, and thyme. Bring to a simmer, cover, and cook on low heat for 2 hours until lamb is tender.

Roasted Cabbage

    Prepare the Cabbage

    Preheat the oven to 400°F (200°C). On a baking sheet, toss cabbage wedges with olive oil, salt, and black pepper.

    Roast the Cabbage

    Roast in the preheated oven for about 25-30 minutes until edges are crispy and tender.

Mustard Cream

    Prepare the Mustard Cream

    In a small saucepan over low heat, combine heavy cream, Dijon mustard, salt, and pepper. Stir until heated through but not boiling.
