Clean Oysters
Rinse the fresh oysters under cold water to remove any dirt and debris. Scrub the shells gently with a brush.

Preheat your oven to 400°F (200°C).

Prepare Baking Sheet
Line a baking sheet with aluminum foil to catch any drips from the oysters.
Roasting Oysters

Season Oysters
Place the cleaned oysters on the baking sheet. Drizzle with olive oil and sprinkle with salt and black pepper.

Roast Oysters
Roast the oysters in the preheated oven for 10-12 minutes, or until they begin to open.
Cajun Cream Sauce

Prepare Cajun Cream
In a small saucepan, combine heavy cream and Cajun seasoning. Heat over medium-low heat, stirring occasionally, until slightly thickened.
Assemble and Serve

Add Cream and Toppings
Once the oysters are roasted, remove them from the oven. Spoon a small amount of the Cajun cream onto each oyster. Top with pickled peppers, a generous sprinkle of parmesan cheese, and chopped parsley.

Return the assembled oysters to the oven for an additional 2-3 minutes, or until the cheese is melted and bubbly.
