Preparation of Chicken

Preheat the Oven
Preheat your oven to 425°F (220°C). This high temperature will help achieve a crispy skin.

Prepare the Chicken
Remove the whole chicken from its packaging and pat it dry with paper towels. This will help the skin crisp up while roasting.

Season the Chicken
Sprinkle salt and black pepper all over the chicken, including inside the cavity, ensuring it is well-seasoned.

Make the Herb Butter
In a mixing bowl, combine the unsalted butter, chopped rosemary, chopped thyme, minced garlic, lemon zest, and lemon juice. Mix until well combined and creamy.

Apply Herb Butter
Gently loosen the skin of the chicken around the breast and thighs using your fingers. Spread half of the herb butter mixture under the skin and the remaining half over the outside of the chicken.
Roasting the Chicken

Roast the Chicken
Place the chicken in a roasting pan breast-side up. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) when measured at the thickest part of the thigh.

Rest the Chicken
Remove the chicken from the oven and let it rest for 15-20 minutes before carving. This allows the juices to redistribute for a more tender chicken.
