Pork Belly Preparation

    Season the Pork Belly

    In a small bowl, combine salt, black pepper, garlic powder, and paprika. Rub this mixture all over the pork belly, ensuring it's evenly coated.

    Sear the Pork Belly

    Heat olive oil in a large skillet over medium-high heat. Place the pork belly skin-side down and sear for about 5-7 minutes until the skin is crispy.

    Cook the Pork Belly

    Transfer the seared pork belly to a preheated oven at 300°F (150°C). Cook for about 2-2.5 hours or until the meat is tender and the fat has rendered.

    Rest and Slice

    Once cooked, remove the pork belly from the oven and let it rest for 15 minutes. Slice into thick pieces before serving.

Pickled Watermelon Preparation

    Prepare the Watermelon

    Cut the watermelon into bite-sized cubes, discarding the rind. Place the watermelon cubes in a bowl.

    Make the Pickling Brine

    In a saucepan, combine white vinegar, sugar, salt, mustard seeds, coriander seeds, and red pepper flakes. Bring to a boil, stirring until the sugar dissolves.

    Pickle the Watermelon

    Pour the hot pickling brine over the watermelon cubes. Allow it to cool to room temperature, then refrigerate for at least 2 hours or overnight for better flavor.
