Preparation of Pork Loin

    Prepare the Marinade

    In a small bowl, mix together the olive oil, garlic powder, onion powder, salt, black pepper, and chopped rosemary.

    Marinate the Pork Loin

    Rub the marinade all over the pork loin and let it sit for at least 30 minutes, or refrigerate for up to 4 hours for more flavor.

Grilling the Pork Loin

    Preheat Grill

    Preheat your grill to medium-high heat (about 400°F or 200°C).

    Grill the Pork Loin

    Place the marinated pork loin on the grill. Grill for about 20-25 minutes, turning occasionally, until the internal temperature reaches 145°F (63°C).

    Rest the Pork Loin

    Once done, remove the pork loin from the grill and let it rest for 10 minutes before slicing.

Preparing Cheddar Grits

    In a medium saucepan, bring 4 cups of water to a boil.

    Once the water is boiling, slowly whisk in the grits. Reduce heat to low and cook for about 20-25 minutes, stirring occasionally.

Apple and Sunchoke Salad Preparation

    Thinly slice the apple and sunchokes. Rinse and dry the dandelion greens.

    In a bowl, combine the apple slices, sunchokes, and dandelion greens.
