Method

Preparing the Steak

    Season the Steak

    Rub the grass-fed hanger steak with olive oil, salt, and black pepper. Let it sit at room temperature for about 30 minutes.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes per side for medium-rare. Adjust cooking time based on your preferred doneness.

    Rest the Steak

    Remove the steak from the heat and let it rest for 10 minutes before slicing.

Preparing Sweet Potatoes

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes

    Peel and cube the sweet potatoes. Toss them in olive oil, salt, and pepper.

    Roast Sweet Potatoes

    Spread sweet potatoes on a baking sheet and roast for 25-30 minutes until tender, stirring halfway through.

Preparing Brussels Sprouts

    Prepare Brussels Sprouts

    Trim the ends of the Brussels sprouts and cut them in half. Toss them with olive oil, salt, and black pepper.

    Roast Brussels Sprouts

    Add Brussels sprouts to the same baking sheet as the sweet potatoes for the last 15 minutes of roasting.

Making Onion Soubise

    Cook Onions

    In a saucepan, melt the butter over medium heat. Add the sliced onions and cook slowly for about 20 minutes until translucent and soft.

    Blend Soubise

    Add heavy cream and salt to the onions, then blend until smooth using an immersion blender or regular blender. Keep warm until serving.

Assembling the Dish

    Plate the Ingredients

    On a plate, spread a layer of onion soubise, top with sliced steak, and arrange roasted sweet potatoes and Brussels sprouts on the side.

    Finish with Feta

    Sprinkle crumbled feta cheese and chopped parsley over the top before serving.
