Fried Green Tomatoes
Goat Cheese and Basil Topping

Frying the Tomatoes

Slice the green tomatoes into 1/4-inch thick slices. Sprinkle both sides with salt and let sit for 10 minutes to draw out moisture.

In a shallow bowl, whisk together the eggs and milk until well combined.

In another shallow bowl, combine the flour, cornmeal, black pepper, and cayenne pepper.

Heat the vegetable oil in a deep skillet over medium-high heat until it reaches 350°F (175°C).

Dredge each tomato slice in the flour mixture, then dip into the egg mixture, and finally coat with the flour mixture again.

Carefully place the breaded tomato slices into the hot oil, frying in batches to avoid overcrowding. Cook for about 3-4 minutes on each side or until golden brown.

Remove the fried tomatoes from the oil and drain on paper towels. Keep warm in a low oven while frying the remaining slices.
Preparing the Goat Cheese and Basil Topping

In a small bowl, crumble the goat cheese and mix with fresh basil leaves, olive oil, balsamic vinegar, salt, and black pepper until well combined.

Set aside until ready to serve.
Assembly

Arrange the fried green tomatoes on a serving platter.

Top each slice with a generous dollop of the goat cheese and basil mixture.
