Method

Fish

  1. 1

    Prepare the Fish

Season the white fish fillets with salt and black pepper on both sides.

  2. 2

    Cook the Fish

In a large skillet, heat olive oil over medium heat. Add the fish fillets and cook for about 3-4 minutes on each side, until the fish is cooked through and flakes easily with a fork. Remove from heat and set aside.

Coconut Curry Collard Greens

  1. 3

    Sauté the Aromatics

In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.

  2. 4

    Add Collard Greens

Stir in the chopped collard greens and cook for an additional 2-3 minutes until they begin to wilt.

  3. 5

    Add Coconut Milk and Spices

Pour in the coconut milk and add the curry powder. Stir well to combine and bring to a gentle simmer. Cook for about 10 minutes until the collard greens are tender.

  4. 6

    Finish with Lemon Juice

Stir in the lemon juice before serving, and adjust seasoning with salt if needed.

Parsnip and Mushrooms

  1. 7

    Sauté Parsnips

In a separate skillet, melt the butter over medium heat. Add the diced parsnips and cook for about 5-7 minutes until they are starting to soften.

  2. 8

    Add Mushrooms and Thyme

Stir in the sliced mushrooms and dried thyme. Cook for an additional 5 minutes, stirring occasionally until the mushrooms are tender and golden brown.

Chutney

  1. 9

    Serve the Chutney

Place the mango chutney in a small bowl for dipping or drizzling over the fish before serving.
