Melt the Chocolate

In a heatproof bowl, break the dark chocolate into small pieces. Place the bowl over a pot of simmering water (double boiler method) and stir until the chocolate is completely melted and smooth. Remove from heat and let it cool slightly.

Prepare the Egg Yolks

Separate the egg yolks from the egg whites. In a mixing bowl, whisk the egg yolks with the granulated sugar until the mixture is pale and creamy. Stir in the melted chocolate and vanilla extract until well combined.

Beat the Egg Whites

In a separate bowl, using an electric mixer, beat the egg whites on medium speed until soft peaks form. Add a pinch of salt and continue to beat until stiff peaks form.

Whip the Cream

In another bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip; it should be light and fluffy.

Combine Mixtures

Gently fold the whipped cream into the chocolate mixture until combined. Then, carefully fold in the beaten egg whites, one-third at a time, until no white streaks remain. Be gentle to maintain the light and airy texture.

Chill the Mousse

Spoon the mousse into serving cups or bowls. Cover and refrigerate for at least 2 hours, or until set.

Serve

Before serving, whip the additional cream until soft peaks form and use it to top each mousse. Garnish with chocolate shavings. Enjoy your homemade chocolate mousse!
