    Preheat your oven to 400°F (200°C). Toss the diced butternut squash with 1 tablespoon of olive oil, salt, and pepper. Spread it out on a baking sheet and roast for 25-30 minutes, or until tender and caramelized.

Cooking the Risotto

    In a large pot, melt 2 tablespoons of unsalted butter over medium heat. Add the finely chopped shallots and minced garlic, sautéing until translucent and fragrant, about 3-4 minutes.
