Method

Preparation of Squash

    Roast the Butternut Squash

    Preheat your oven to 400°F (200°C). Spread the diced butternut squash on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for 25-30 minutes, or until tender and caramelized. Remove from oven and set aside.

Cooking the Risotto

    Sauté Mushrooms and Sage

    In a large saucepan, heat 2 tablespoons of olive oil over medium heat. Add the sliced mushrooms and sauté until they are soft and browned, about 5-7 minutes. Add the chopped sage and cook for an additional minute. Remove the mixture from the pan and set aside.

    Cook the Arborio Rice

    In the same saucepan, add 2 tablespoons of butter and allow it to melt. Add the Arborio rice and stir to coat the grains with the butter. Cook for 2-3 minutes until the rice is lightly toasted.

    Add Vegetable Broth Gradually

    Begin adding the vegetable broth one ladle at a time, stirring continuously. Allow the rice to absorb most of the liquid before adding the next ladle. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

    Combine Ingredients

    Once the rice is cooked, gently fold in the roasted butternut squash, sautéed mushrooms, and sage mixture. Stir in the ricotta cheese until well combined. Adjust seasoning with salt and black pepper to taste.

Finishing Touches

    Brown the Butter

    In a small skillet, melt the remaining 2 tablespoons of butter over medium heat. Cook until the butter turns golden brown and develops a nutty aroma, about 3-5 minutes. Be careful not to burn it.

    Serve the Risotto
