Preparation of Scallops

    Sear the Scallops

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the scallops with salt and black pepper. Once the oil is shimmering, add the scallops to the skillet and sear for about 2-3 minutes on each side until they are golden brown and cooked through. Remove from the skillet and set aside.

Preparation of Yuzu Puttanesca Sauce

    Make the Sauce

    In the same skillet, add 2 tablespoons of olive oil and reduce the heat to medium. Add minced garlic and sauté for about 30 seconds until fragrant. Add the chopped anchovies and crushed red pepper flakes, cooking for another minute. Stir in the crushed tomatoes, Kalamata olives, and capers. Simmer for 10 minutes until the sauce thickens slightly. Finally, stir in the yuzu juice and chopped parsley.

Serving

    Plate the Dish

    On a serving plate, spoon a generous amount of yuzu puttanesca sauce and arrange the seared scallops on top. Garnish with additional parsley if desired.
