Preparing the Roasted Beets

Roast the Beets

Preheat the oven to 400°F (200°C). Toss the cubed beets with olive oil, sea salt, and black pepper. Spread them on a baking sheet and roast for about 25-30 minutes until tender. Allow to cool.

Making the Mustard Aioli

Prepare the Mustard Aioli

In a bowl, combine mayonnaise, Dijon mustard, minced garlic, and lemon juice. Whisk until smooth and set aside.

Preparing the Kataïfi Nest

Bake the Kataïfi Nests

Preheat the oven to 375°F (190°C). Shred the kataïfi pastry and mix it with melted butter. Form small nests on a baking sheet and bake for about 15-20 minutes until golden and crispy.

Assembling the Tartare

Assemble the Dish

In a bowl, combine the lobster meat, tobiko, chopped chives, lemon juice, sea salt, and black pepper. Mix gently. Place a kataïfi nest on a plate, spoon the lobster mixture into the nest, and top with roasted beets. Drizzle mustard aioli over the top and serve immediately.
