Preparation
1. Prepare the Beef
Wrap the Wagyu beef tenderloin tightly in plastic wrap and place it in the freezer for about 1 hour to firm up. This will make slicing easier.
2. Slice the Beef
Once the beef is firm, remove it from the freezer and unwrap it. Using a sharp knife, slice the beef as thinly as possible. Arrange the slices on a large plate or platter.
3. Prepare the Jalapeño Ponzu
Finely chop the jalapeño and mix it with the ponzu sauce in a small bowl. Adjust the heat according to your preference.
4. Prepare the Asian Pear
Thinly slice the Asian pear and arrange the slices on top of the beef.
5. Assemble the Dish
Drizzle the jalapeño ponzu over the beef and pear. Sprinkle salt and black pepper to taste. Add the Asian greens around the beef on the plate.
6. Finish with Olive Oil
Drizzle the olive oil over the dish before serving.
